&lt;div&gt;&lt;span class="ingredient"&gt;2 c. sifted all purpose flour&lt;/span&gt;&lt;br/&gt;&lt;span class="ingredient"&gt;1/2 c. sugar&lt;/span&gt;&lt;br/&gt;&lt;span class="ingredient"&gt;3 tsp. baking powder&lt;/span&gt;&lt;br/&gt;&lt;span class="ingredient"&gt;1/2 tsp. salt&lt;/span&gt;&lt;br/&gt;&lt;span class="ingredient"&gt;1/2 tsp. cinnamon or pumpkin pie spice&lt;/span&gt;&lt;br/&gt;&lt;span class="ingredient"&gt;1 egg&lt;/span&gt;&lt;br/&gt;&lt;span class="ingredient"&gt;1/2 c. milk&lt;/span&gt;&lt;br/&gt;&lt;span class="ingredient"&gt;1 c. mashed fresh pumpkin, drained&lt;/span&gt;&lt;br/&gt;&lt;span class="ingredient"&gt;1/4 c. vegetable oil&lt;/span&gt;&lt;/div&gt;
&lt;div class="instructions"&gt;Preheat oven to 425°F.
&lt;p&gt;Sift flour, sugar, baking powder, salt and cinnamon or spices into a bowl. Beat egg; mix in milk, pumpkin and salad oil. Make a well in center of flour mixture; pour in pumpkin mixture all at once. Sir quickly until flour is just moistened. Fill greased muffin cups 2/3 full.&lt;/p&gt;
&lt;p&gt;Bake at 425°F for 25 minutes, or until done. Run spatula around each muffin to loosen; serve immediately.&lt;/p&gt;
&lt;p&gt;Makes about 15 (2 1/2 inch) muffins.&lt;/p&gt;

&lt;p&gt;&lt;em&gt;&lt;strong&gt;Raw, Vegan Dark Chocolate Cherry Cookies&lt;/strong&gt; (raw, vegan, gluten free if you use GF oats, soy free)&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;&lt;em&gt;Makes about 8 large cookies; recipe can be easily doubled&lt;/em&gt;&lt;/p&gt;
&lt;blockquote&gt;
&lt;ul&gt;&lt;li&gt;1 cup almond meal (you can use store bought, like the Bob’s Red Mill brand, or you can grind almonds finely in a food processor) &lt;/li&gt;
&lt;li&gt;1/3 cup oat flour (I ground raw oat groats in my coffee grinder, but you can use store bought, too) &lt;/li&gt;
&lt;li&gt;3 tbsp raw cacao powder &lt;/li&gt;
&lt;li&gt;12 large, pitted medjool dates &lt;/li&gt;
&lt;li&gt;1/3 cup dried cherries &lt;/li&gt;
&lt;li&gt;1/4 cup chopped raw dark chocolate, or vegan dark chocolate chips&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;1. In a food processor, process almond meal, oat flour, and cacao to combine.&lt;/p&gt;
&lt;p&gt;2. Add dates, and process until the mixture is thick and sticks together easily when you clasp a little in your hand (look for similar texture to when you make homemade raw energy balls or Larabars). If the mixture is too dry, add an extra date, a drizzle of agave, or a tablespoon of almond butter!&lt;/p&gt;
&lt;p&gt;3. Add cherries and chocolate. Pulse to break down the cherries and chocolate into small pieces and mix them evenly throughout.&lt;/p&gt;
&lt;p&gt;4. Place “dough” onto a sheet of saran wrap that has been laid onto a flat surface. Cover with another saran sheet, and use a rolling pin to flatten the mixture to just over 1/4 inch thick. Refrigerate for a few hours, or overnight.&lt;/p&gt;
&lt;p&gt;5. Cut dough into desired shapes with a cookie cutter, and enjoy!&lt;/p&gt;

I  always wondered &lt;strong&gt;why ready made soy milk is so expencive&lt;/strong&gt; so i searched for a recipe and i found one at : &lt;a href="http://www.thekitchenplayground.com/"&gt;&lt;a href="http://www.thekitchenplayground.com"&gt;http://www.thekitchenplayground.com&lt;/a&gt;&lt;/a&gt; I made it and i am very pleased with the result ! But after making soy milk ,a new question was born… what can I do with the filtered pulp of soy used for soy milk? But the answer was there.. &lt;p&gt;1 κ.σ. έξτρα παρθένο ελαιόλαδο&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;ΠΡΟΕΤΟΙΜΑΣΙΑ:&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;1. Βάλτε τα υλικά μέσα στον κάδο, ζυμώστε για 2 λεπτά, ταχύτητα στάχυ. Φτιάξτε τη ζύμη μια μεγάλη μπάλα, τυλίξτε τη με μεμβράνη και αφήστε τη να ξεκουραστεί 15 λεπτά.&lt;/p&gt;
&lt;p&gt; 2. Απλώστε τη ζύμη σε λεπτά, ορθογώνια σχήματα, σε  μια αλευρωμένη επιφάνεια, είτε με τον πλάστη είτε με το μηχάνημα των ζυμαρικών. Πασπαλίστε με αλεύρι τη ζύμη για να αποφύγετε να κολλήσουν τα κομμάτια μεταξύ τους.&lt;/p&gt;
&lt;p&gt;Τύποι ζυμαρικών:&lt;/p&gt;
&lt;p&gt;Λαζάνια ή ραβιόλια: Κόψτε σε φύλλα (20 x 10 εκ. περίπου)&lt;/p&gt;
&lt;p&gt;Ταλιατέλες: Κόψτε σε λωρίδες (2 x 30 εκ. μέγιστο)&lt;/p&gt;
&lt;p&gt;Φαρφάλες: Κόψτε σε μικρά ορθογώνια κομμάτια (2 x 5 εκ.) και πιέστε στο κέντρο το κάθε κομμάτι να γίνει πεταλούδα.&lt;/p&gt;
&lt;p&gt;3. Μαγειρέψτε την πάστα σε αλατισμένο βραστό νερό για 3-4 λεπτά περίπου.&lt;/p&gt;
&lt;p&gt;Συμβουλές:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;Τα ζυμαρικά σερβίρονται ως συνοδευτικό ή ως κυρίως πιάτο με σάλτσα ντομάτας, πέστο ή τη σάλτσα που προτιμάτε. &lt;/li&gt;
&lt;li&gt;Είναι πολύ εύκολο να ετοιμάσετε μεγαλύτερη ποσότητα. Προσθέστε 1 αβγό για κάθε 100 γρ. αλεύρι. Μέγιστη ποσότητα: 500 γρ. αλεύρι και 5 αβγά, ζυμώστε για 3 λεπτά.&lt;/li&gt;
&lt;li&gt;Απλώστε μικρά κομμάτια ζύμης, ένα-ένα τη φορά, ή σκεπάστε τη ζύμη με μια υγρή πετσέτα για να αποφύγετε να ξεραθεί.&lt;/li&gt;

Look for lecithin (preferably non-GMO), in granules or powdered form, at your local HFS. If using granules, make sure to grind them up in a high speed blender of coffee grinder.&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;strong&gt;Banana Layer and Decoration&lt;/strong&gt;&lt;br/&gt;&lt;span&gt;2 or 3 ripe bananas, sliced&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;br/&gt;&lt;strong&gt;To make the Whipped Cream:&lt;/strong&gt;&lt;br/&gt;&lt;span&gt;Blend all ingredients except coconut oil and lecithin until smooth. Add coconut oil and lecithin and blend until thoroughly mixed. Set in fridge for about 1 hr.&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;span&gt;You should have extra whipped cream but I’m sure you’ll find other ways to use it. lol&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;strong&gt;To make the Cake:&lt;/strong&gt;&lt;br/&gt;&lt;span&gt;Place dates in food processor and process until a smooth paste forms. You may need to add a little water.&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;span&gt;Then add the rest of the ingredients and mix until smooth.&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;strong&gt;Assembly:&lt;/strong&gt;&lt;br/&gt;&lt;span&gt;Grease a spring form pan with a little coconut oil or line a medium margarine tub with plastic film.&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;span&gt;Next form an even layer on the bottom with half of the cake mixture.&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;span&gt;Top with banana slices, followed by some of the whipped cream. Set in fridge.&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;span&gt;When very firm, form another cake layer. Then top with more banana slices. (Remember to save some for decoration).&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;span&gt;Again top with whipped cream and set in fridge.&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;span&gt;When firm, gently remove cake from the pan or margarine tub and place on serving plate.&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;span&gt;Decorate with banana slices and serve.&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;strong&gt;Carmella’s Notes:&lt;/strong&gt;&lt;br/&gt;&lt;span&gt;~ For the whipped cream, I used psyllium husks instead of lecithin, as suggested in Cafe Gratitude’s recipe. As a result, I found that I had to let the cream set in the freezer rather than in the fridge. The consistency also made it difficult for the cake to hold its shape well once at room temperature. However, this may not be a major issue if you keep the cake in the freezer, thawing pieces as needed.&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;span&gt;~ It is key that you grind your nuts finely in a coffee grinder or a high speed blender before processing them with the other ingredients. This will ensure that your cake layer has a lovely smooth texture.&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;span&gt;~ In order to apply the cake layer easily, the whipped cream needs to be quite firm (set in the fridge or freezer first). If you find that the cream tends to yield while patting down the cake, try forming the cake layer on a different surface (such as the counter or a plate) then transferring it over to the pan.&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;span&gt;~ For a simpler version of this, simply put a cake layer, followed by banana slices. Top with whipped cream and let set in the fridge/freezer. Decorate and serve.&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;/p&gt;

&lt;p&gt;&lt;em&gt;Rice: cauliflower, cashew cheese (mix cashew + water + nutritional yeast + sea salt), more nutrional yeast, sea salt, apple cider vinegar, dill&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;&lt;em&gt;filling: avocado, raw salmon if you wanna go a bit meaty, cucuber, carrot, cashew cheese and dill.&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;&lt;em&gt;- Mix the cauliflower in a food processor until rice texture. Pour into a bowl and mix with cashew cheese until slightly creamy, like sushi rice. Season to taste with nutritional yeast, sea salt, apple cider vinegar and dill.&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;&lt;em&gt;roll the sushi!&lt;/em&gt;&lt;/p&gt;

MY “IRONy” SALAD

&lt;p&gt;&lt;span&gt;&lt;strong&gt;MY “IRONy”&lt;em&gt; SALAD&lt;/em&gt;&lt;/strong&gt;&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;I often experiment with ingrediends when preparing my meals, especially when making salads.&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;This time I had bought fresh organic spinash, sultana raisins and parsley three sources of iron so I thought this could make a good combination for the iron absorbtion, &lt;em&gt;sultana raisins also contains vitamin C that increases the absorption of iron.&lt;/em&gt;&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;&lt;em&gt;&lt;br/&gt;&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Main salad ingredients :&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;2-3 handfuls of spinach&lt;/p&gt;
&lt;p&gt;1 batch of parsley chopped&lt;/p&gt;
&lt;p&gt;1 batch of arugula&lt;/p&gt;
&lt;p&gt;1/2 cup alfalfa sprouts&lt;/p&gt;
&lt;p&gt;1 Tsp almonds (presoaked optionally)&lt;/p&gt;
&lt;p&gt;1 Tsp sultana raisins&lt;/p&gt;
&lt;p&gt;1 Tsp pumpkin seeds&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Dressing:&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;1 Tsp tahini&lt;/p&gt;
&lt;p&gt;1 Tsp balsamic vinegar&lt;/p&gt;
&lt;p&gt;1 tsp honey&lt;/p&gt;
&lt;p&gt;Some oat milk for thinning the dressing.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;&lt;em&gt;Συχνά πειραματίζομαι με τα υλικά όταν προετοιμάζω ένα γεύμα. Ιδιαίτερα όταν πρόκειται για μια σαλάτα!&lt;/em&gt;&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;&lt;em&gt;Αυτή τη φορά είχα αγοράσει φρέσκο βιολογικό σπανάκι από  τη λαϊκή, &lt;/em&gt;&lt;/strong&gt;&lt;strong&gt;&lt;em&gt;επίσης &lt;/em&gt;&lt;/strong&gt;&lt;strong&gt;&lt;em&gt;είχα  μαϊντανό και σταφίδες και τα τρία καλές πηγές σιδήρου! Επίσης καλός συνδυασμός υλικών, λόγω της βιταμίνης C που υπάρχει άφθονη στις σταφίδες, και βοηθά  &lt;/em&gt;&lt;/strong&gt;&lt;strong&gt;&lt;em&gt;την απορρόφηση του σιδήρου.&lt;/em&gt;&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;&lt;em&gt;συστατικά:&lt;/em&gt;&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Υλικά σαλάτας :&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;2-3 χούφτες σπανάκι&lt;/p&gt;
&lt;p&gt;1 ματσάκι μαϊντανό&lt;/p&gt;
&lt;p&gt;1 ματσάκι ρόκα&lt;/p&gt;
&lt;p&gt;1/2 φλυτζάνι alfalfa φύτρα&lt;/p&gt;
&lt;p&gt;1 κουταλιά αμύγδαλα (προεραιτικά)&lt;/p&gt;
&lt;p&gt;1 κουταλιά σταφίδες&lt;/p&gt;
&lt;p&gt;1 κουταλάκι πασατέμπο&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Dressing:&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;1  κουταλιά ταχίνι&lt;/p&gt;
&lt;p&gt;1  κουταλιά βαλσαμικό ξύδι&lt;/p&gt;
&lt;p&gt;1 κουταλάκι μέλι&lt;/p&gt;
&lt;p&gt;λίγο γάλα βρώμης για αραίωμα του dressing.&lt;/p&gt;
&lt;br/&gt;&lt;p&gt;&lt;strong&gt;&lt;em&gt;&lt;br/&gt;&lt;/em&gt;&lt;/strong&gt;&lt;/p&gt;
